To make delicious crispy broast chicken at home, you will need the following ingredients:
- 1 kg chicken (cut into medium pieces)
- 2 cups all-purpose flour (maida)
- 1/2 cup cornflour
- 1 cup buttermilk (or milk + 1 tbsp vinegar)
- 1 egg
- 1 tbsp ginger garlic paste
- 1 tsp red chili powder
- 1 tsp black pepper powder
- 1 tsp paprika powder (for color and mild flavor)
- 1/2 tsp baking powder
- Salt to taste
- 1/2 tsp white pepper (optional but recommended)
- 1/2 tsp garlic powder (optional)
- Oil for deep frying

Step 1: Preparing the Marinade (Marination Tayyar Karna)
Take a large mixing bowl and add the chicken pieces into it. Now pour in the buttermilk. If you don’t have buttermilk, you can make it by adding one tablespoon of vinegar into one cup of milk and letting it sit for 5 minutes. Add the egg, ginger garlic paste, salt, red chili powder, black pepper, and white pepper. Mix everything thoroughly so that each piece of chicken is fully coated. Cover the bowl and place it in the refrigerator for at least 4 to 6 hours. For best results, marinate overnight. This step makes the chicken tender, juicy, and full of flavor.

In another bowl, add flour, cornflour, baking powder, paprika, salt, and garlic powder. Mix all dry ingredients well.
